Greek Mac and Cheese
Greek Mac and Cheese Recipe
Directions:
Prep Chicken:
Put 1-2 tbsp olive oil on the bottom of a baking dish. Place chicken breast in pan. Season well with Greek seasoning and powdered lemon or lemon juice. Flip, drizzle with olive oil, and season the other side.
Bake at 350°F until the internal temperature reaches 165°F. This should take about 25-30 minutes.
Prep Tomatoes:
Toss tomatoes in 2-3 tablespoons olive oil, a couple teaspoons of greek seasoning, about a half tsp of salt and a half teaspoon of pepper. (You can estimate these measurements)
Put tomatoes on a foil lined baking sheet and bake at 400°F for 15-20 minutes until blistered.
Prep other ingredients:
Grate mozzarella cheese
Shred chicken with a knife or hand mixer
Melt butter
Steam spinach in the microwave or on stovetop.
Boil noodles until al dente and drain
Assembly:
Spray a large pan with cooking spray
Place noodles in pan and add in olive oil and butter to coat and stir noodles to break up. (1 tbsp each for small batch, 2 tbsp each for large batch)
Add chicken, tomatoes, and spinach and stir
Add extra greek seasoning, salt and pepper and stir
Add mozzarella cheese and feta and stir well making sure that all ingredients are incorporated well. (you can also do this in a larger bowl and then pour into pan)
Whisk greek yogurt and eggs together. Then whisk in milk, salt and pepper.
Pour yogurt mixture over the noodle mixture, ensuring that it is evenly over all parts. If it does not look like it is coming up to the top, you may need more of the yogurt, egg, milk mixture.
Mix panko, olive oil, and butter together. Sprinkle over top of the mixture
Cover with foil and bake at 350°F for 40 minutes covered with foil
Uncover and bake 10 minutes more to brown the panko. Enjoy!
You might wonder how this recipe came about. I was talking one day with some of my sweet kids in my 4th period class about the healthier mac and cheese recipe that we made in our class. That recipe has greek yogurt in it because it is, after all, a Foods and Nutrition class and we are trying to do healthier alternatives to classic recipes. So we started brainistorming ways to make it better and somehow between the three of us, we came up with Greek Mac and Cheese. Obviously, I brought some to share with them after filming this video. Thank you to my fourth period young ladies for the inspiration. I hope you try this one. Leave us a comment if you do. This one was amazing and would be an awesome dish for a party. I also highly recommend freezing the leftovers in single servings in meal prep containers. My husband and I do this often with things that I cook too much of, (which lets be real, I always cook too much) and it is always a nice little surprise to have the dishes a few weeks, or even months later when we don’t want to cook. Label it well though, because you will forget.
